My mum is English and as many of you probably know the English usually have a roast lunch on Sundays. I grew up having many roasts and these roasted root veggies were a stable. It is just an easy way to use the veggies that are in season in the fall and winter and they are quite tasty if I do say so myself. The leftovers also go wonderfully in a bubble & squeak (stay tuned for this recipe at the end of December).
These roasted root veggies go well with roast dinners but also with grilled meats or even on their own.
